No-Bake Irish Potato Candy



LeeAnn told me that when she was growing up in South Jersey, she use to have a candy that she always enjoyed during St. Patrick's called an Irish Potato. Coconut and buttercream potato shaped balls rolled in cinnamon. I never heard of it but I guess it's like a macaroon. She was craving it now. Why don't you call your dad and have him send some over. And give him our Fedex account number so that we could get it tomorrow. STAT!
Two boxes came in and they were simple but delicious and the cinnamon made it slightly spicy. This product may contains coconut flakes. Not safe if your name is Simone.


Here's a simple variation of the recipe.
"Small, no-bake confections that look like potatoes. It's fast and easy."

Servings: 2 dozen (approx.)

INGREDIENTS:
1 cup confectioners' sugar
1 cup shredded coconut
1-1/2 tablespoons cream
2 tablespoons ground cinnamon

DIRECTIONS:
Sprinkle the sugar on the coconut. Add the cream and mix gently.
Take approximately 1/2 tablespoon of dough and roll into balls. Place cinnamon in a plastic bag and shake cookies a few at a time until coated.
