I woke up with a sore throat and feeling icky so I'm staying home today.
But I get to make breakfast. I wanted to try something new.
I've seen pictures but I never had one of these before.
1 slice of whole wheat bread
1 tablespoon of butter
1 large egg
1 slice of American Cheese
salt and fresh ground pepper
I used a glass to cut a hole from a slice of whole wheat bread.
melt a tablespoon of butter in a cast iron skillet,
toast the bread and crack an egg into the hole.
when the egg is set, flip to toast the other side
top with a slice of American cheese.
when melted, plate it, salt and pepper it and eat it.
So simple. Eggs are slightly runny and the hole keeps it in place for the toast to soak it up. Where the egg spills into the bread, it's a little like French toast.
Yummy, eggy goodness.
What I like about this recipe is that it takes less steps and clean up than scrambling eggs, or making omelets, and you don't have to toast the bread separately.
EAT IT!
